Millets, as cereal crops, do not typically contain high levels of iodine.   Millet contains goitrogens.These compounds inhibit the thyroid gland's ability to use iodine. Iodine is required for the production of thyroid hormones, which are responsible for metabolic regulation and growth. In areas where people are already deficient in iodine, a millet-rich diet may contribute to goiter, which is an enlargement of the thyroid gland.
